Clean Oaty Pancakes

At the weekends I have a bit more time on my hands so I always make my son and I pancakes for breakfast, because who doesn’t love pancakes, right?..

But I’m not talking about the super sweet version and then you pour half a pint of syrup on top, so afterwards you’re in a sugar coma… oh no.. but instead I make these clean oaty ones that are dense and filling and defiantly hit that pancake spot!

INGREDIENTS: Makes 1 large pancake

  • 2 eggs
  • 2 tbsp oats
  • 1/2 tsp vanilla bean paste
  • splash almond milk
  • 1 tbsp honey (optional if you want to add sweetness)
  • Blueberries, Strawberries
  • Almond/Peanut butter
  • Plain live greek yogurt
  • Shredded coconut
  • 1 tsp coconut oil

Blend eggs, oats, vanilla paste, milk and honey together in a high speed blender, then pour into a pan with a little bit melted coconut oil. Pop a few blueberries into the batter.

Cook for a few minutes then flip and cook for a further few mins until lightly browned.

Turn out onto a plate and top with almond/peanut butter, greek yogurt, berries and shredded coconut and enjoy! Simply delicious!..
