My Veggie Stir Fry – Healthy Style

I love a stir fry, it’s quick, it’s easy and there’s hardly any dishes, what’s not to love about that?!…

So here’s my super simple veggie stir fry all made from scratch and it tastes so yummy, you’ll definitely be coming back for more!

  • 1/2 chopped onion
  • 2 sliced carrots
  • 1 cup sliced mushrooms
  • 1/2 red pepper – 1/2 yellow pepper
  • 1 crushed garlic clove
  • 1 cup beansprouts
  • 1/2 cup sliced cabbage
  • 1/4 cup petit pois
  • handful cherry tomatoes
  • 2 tbsp miso paste
  • 1/2 tsp each of chilli flakes, paprika
  • 1/4 tsp sea salt & black pepper
  • 2 tbsp water

Heat up large frying pan with 1 tsp coconut oil then add all ingredients and cook on a high heat for around 3 – 5 minutes. Serves 2.

Serve and eat straight away! How easy is that? You can even pre prep all the veggies and keep them in you fridge in an airtight container for a few days, then throw everything into the pan when you’re ready to go. Enjoy!

Optional: Add chopped cooked chicken and heat through.
