Vegetable Soup with Quinoa & Lentils


There’s nothing better than a big bowl of steaming homemade soup on a cold wintery day. I love this soup, it’s heartwarming, delicious, filling and healthy.
It makes a huge pot, so it’s great for making in advance and freezes really well.

Yields: Makes a large pot!

  • 1 cup of green beans
  • 1 courgette,
  • 1 onion
  • 3 garlic cloves
  • 2 carrots
  • 2 celery stalks
  • 2 cups passata
  • 1 tsp dried herbs
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 litre water
  • Cooked lentils
  • Cooked quinoa

Place all ingredients into a pan except the lentils & quinoa and bring to the boil. Reduce to a simmer for around 30 minutes. Using a hand blender, blend until you have a smooth consistency.

Ladle into a bowl and add 2 tbsp each of cooked lentils and quinoa.

(I tend to keep portions of cooked lentils & quinoa in my fridge as they are so versatile and can be added to lots of different recipes)

  • Cook time: 30 minutes
  • Total time: 45 minutes
