Looking for a recipe for chocolate cake that uses no sugar and no flour? Well here it is! There is no way anyone would guess that these were made using chickpeas, I promise. They are chocolatety, spongey and moreish, you’ll definitely want more than one!
Yields: 12 cupcakes
- 1 can chickpeas (thoroughly rinsed)
- 3 eggs
- 1/2 cup dates (around 12)
- 1/2 cup unsweetened cocoa or raw cacao
- 3 tbsp coconut oil, melted
- 1 tsp pure vanilla extract
Preheat oven to 175c.
Place all ingredients into a blender until mixture becomes smooth. Spoon cake batter into muffin tray. ( I use a silicon muffin tray, as you don’t need to oil it and afterwards they slip right out!) Bake for around 20 minutes until a toothpick inserted into centre comes out clean.
Cool and enjoy!
