I love a good curry but don’t really like the layer of oil that usually comes with them. Here’s a simple, quick curry recipe that tastes amazing without all the grease!
This one is vegetarian but you could add cooked chicken near the end for a meat version.
- 1 tsp coconut oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1/2 tsp each of: sea salt, black pepper, curry powder, garam masala, turmeric
- 1 courgette, chopped
- 1 can coconut milk
- 1 cup chopped tomatoes
- 1 can chickpeas
Cook onion off in coconut oil until soft, add garlic and spices and cook for a few minutes on medium heat. Add all other ingredients and continue to cook on medium heat for around 20 minutes. Serve with brown rice.
