Sometimes in the evenings I really struggle with my sweet tooth! These little muffins keep me sane, stop me reaching for the cookie tin AND with no added sugar these are definitely a win win!!
Yields: 9 muffins or 12 mini muffins
- 2 bananas
- 1 tbsp coconut oil
- 2 eggs
- 1 1/2 cups oat flour
- pinch sea salt
- 2 tbsp cacoa powder
- 2 tbsp chia seeds
- 10 dates (chopped)
- unsweetened almond milk to batter consistency
Heat oven to 180c.
Mash together bananas, coconut oil and eggs. Mix in all other dry ingredients until combined. Stir in chopped dates, then add milk gradually until you get a batter consistency.
Spoon into a silicon muffin tin and bake for 20 mins.
